Last week my wife and I were faced with a 42 degree day, oh man was it hot! Neither of us wanted to cook. Just the thought of having to turn on the oven or standing over the BBQ was hell.
So we did what any enlightened people would do in 2022, We turned to google! After scrolling through what seemed like hundreds of recipes, we landed on a cold serve sushi bowl with homemade California roll sauce.
DING DING DING, we had a winner and oh my god I am so excited to share this little gem with you today.
Ingredients For Bowl
2 Large carrots
1 Cucumber
4 cups of rice ( we used minute rice )
4 cups of water
1 package of imitation crab
Green onions
2 tablespoon of rice vinegar
1 tablespoon of white sugar.
Ingredients For Sauce
4 tablespoons of mayo
1 teaspoon of garlic chili sauce
(more to taste )
1-2 squirts of lemon juice

Prep Rice
The very first step will be to make your rice and you will need to let it fully cool before serving. In a medium sized pot add 4 cups of water, 2 tablespoons of rice vinegar and 1 tablespoon of white sugar, bring to a boil. Add the 4 cups or rice, cover your pot and allow it to sit for 10 minutes. Once all moisture has evaporated from the rice you will want to move it to a bowl big enough to allow you to mix the rice around as it cools.
Mix California Sauce
In a small bowl add 4 tablespoons of mayo and 1 teaspoon of garlic chili sauce and mix. Taste for desired level or spicy, add more garlic chili sauce if desired. Once you have found the right level or heat for you add in 1-2 squirts of lemon juice to round out flavor. Store the sauce in the fridge until ready to serve.
Sushi Bowl
Time to prepare your fish and veggies, first peel both your cucumber and carrots. Using your peeler you will want to create thin strips from the carrots that you can stack until both carrots are fully peeled all the way through. Using your best vegetable knife you will want to slice your stacked carrots lengthwise into slivers. Turning your slivers of carrot sideways you will need to cut them again into ½ inch bite sized pieces. Set carrots aside and repeat the process with the cucumber.
Slice green onions into thin segments and set aside.
Take your imitation crab or real crab if you’re springing for it and cut into small bite sized chunks. Set aside.
Finally it’s time to build your sushi bowls, now you could of course just toss handfuls of everything in and away you go but lets pretend you’re serving others and presentation is key! First place 1 cup of rice in the bottom of a bowl. Now make a mental picture in your head and divide the bowl into 4 sections. In each of the first 3 sections fill with one type of veg and in the final and 4th spot add your crab. This will give you a gorgeous presentation of color that anyone would be excited to eat.
Lastly you will want the California sauce you already prepared. Mix and eat! Enjoy!
